Tasting Notes
In the glass, Sauvignon Blow Bio 2023 appears pale lemon with green reflections, signalling freshness and youthful energy. The nose is intentionally subtle rather than flamboyant: delicate notes of gooseberry and white currant are wrapped in cool herbal nuances, white pepper and a firm, stony minerality. With a bit of air, more classic Sauvignon tones emerge—fresh-cut herbs, nettle and a hint of green pepper—yet they remain finely tuned and never overpowering.

Production
The fruit for Sauvignon Blow Bio 2023 comes from organically farmed vineyards in two distinct Styrian subregions: the steep, cooler hillsides of Südsteiermark and the volcanic-influenced slopes of Vulkanland Steiermark. Here, constant breezes, pronounced day–night temperature swings and a mix of limestone, clay and volcanic soils slow ripening and preserve natural acidity, leading to a precise, low-alcohol style of Sauvignon Blanc. Grapes are harvested by hand at optimal ripeness to capture aromatic clarity without overripeness, then gently pressed. Fermentation takes place with careful temperature control, predominantly in stainless steel to protect freshness, with a minimalist approach in the cellar to avoid oak influence and let the pure, varietal and mineral character of the wine shine through.

This is a versatile, food-friendly Sauvignon Blanc that excels with light, clean flavours. Pair it with fresh goat’s cheese, grilled or poached fish, ceviche, sushi and sashimi, or simple shellfish dishes such as oysters, prawns and mussels. Its herbal and mineral edge also works beautifully with spring vegetables—think asparagus, pea risotto, artichokes or salads with citrus dressings and fresh herbs.
