Tasting Notes
The wine shows a light copper hue in the glass, hinting at its unusual élevage. Aromatically, it is wonderfully layered and a little unexpected, with notes of strawberry, apple, apricot pastry, wet stone, and white flowers. On the palate, it stays on the fresher side, bringing citrus, cranberry, and strawberry together with a distinct mineral edge. The result is a vibrant, cool-toned Chardonnay with plenty of personality and a stylish, almost savory complexity. It should drink well now for its freshness and texture, though it may continue to evolve gracefully over the next few years.

Production
The fruit comes from X Omni Vineyard in Oregon’s Willamette Valley, a region known for its cool climate and its ability to produce finely etched Chardonnay. The grapes are harvested by hand, then fermented before aging for 12 months in a combination of new and used oak barrels. After that, the wine spends an additional six months in stainless steel with Pinot Noir lees, which gives the wine its pink-tinged color and its more unconventional texture and aromatic profile.

Food & Serving
This is an excellent match for dishes that can handle both freshness and subtle savory complexity, such as roast chicken, crab, salmon, sushi, or creamy pasta with herbs. It also works beautifully with mushroom dishes, charcuterie, or aged hard cheeses. Serve lightly chilled, around 10–12°C, and decanting is not necessary unless you want to open it up a little more in the glass.
