Tasting Notes
Expect a delicate, luminous rosé hue with fine, persistent bubbles and an attractive sense of finesse in the glass. The bouquet is likely to show layered notes of small red berries, citrus, subtle floral tones, and a gentle creamy nuance from its élevage. On the palate, it should be elegant and structured, balancing freshness with a rounded texture and a long, polished finish. The combination of Chardonnay and Pinot Noir gives it both brightness and depth, and while it is already approachable, it should also have the concentration to age gracefully for a number of years.

Production
Cabochon was created from Monte Rossa’s search, beginning in 1985, for a more careful selection of cru sites on the Monte Rossa hill and a new vinification method introducing barriques for the first fermentation of the must. In the Franciacorta terroir of Lombardy, this approach aims to capture both purity and complexity, with meticulous attention to vineyard selection and cellar precision.

Food & Serving
This rosé Franciacorta works beautifully with refined dishes such as salmon tartare, shellfish, sashimi, delicate risottos, roast quail, or berry-based desserts. Serve well chilled, ideally around 8–10°C, and consider brief decanting only if you want to emphasize its aromatic complexity, though it is generally best enjoyed straight from the bottle.
