Monte Rossa Franciacorta Cabochon Fuoriserie 026 Brut Magnum is the house’s most prestigious Franciacorta, crafted from a meticulous selection of cru vineyards on the slopes of Monte Rossa. First developed through research that began in 1985, it helped define the winery’s style and quickly became an iconic expression of the estate.
Tasting Notes
Cabochon Fuoriserie 026 Brut Magnum is known for its refined, luminous character and elegant mousse. In the glass, it typically shows a fine, persistent perlage with aromas of ripe citrus, white flowers, baked brioche, toasted almonds, and subtle mineral notes. On the palate it is layered and precise, combining freshness, creamy texture, and depth from Chardonnay and Pinot Noir, with a long, polished finish.
Thanks to its complexity and structure, this cuvée has excellent aging potential and can evolve beautifully in bottle, developing even more pronounced pastry, honeyed, and nutty nuances over time.
Production
The fruit comes from carefully selected cru sites on Monte Rossa’s hillside vineyards in Lombardy, where the terroir supports both aromatic finesse and natural structure. The winemaking approach introduced for Cabochon included the use of barriques for the first fermentation of the must, adding texture, complexity, and subtle oak influence while preserving the purity of the fruit. The result is a sophisticated Franciacorta built on precision, selection, and careful cellar work.
Food & Serving
This Brut Magnum pairs beautifully with oysters, sushi, lobster, delicate seafood, risotto, and refined poultry dishes, as well as aged Parmigiano Reggiano or light truffle dishes. Serve well chilled, ideally around 8–10°C, and consider opening it a little in advance rather than extensive decanting, so the wine can fully express its aromatic complexity.

Monte Rossa is one of the benchmark producers in Franciacorta, with a strong reputation for quality, innovation, and elegance. The estate’s long-term research into cru selection and cellar techniques, especially from the 1980s onward, played an important role in shaping its identity and strengthening its place in the region. Cabochon stands as one of its most celebrated achievements and a true flagship for the winery.
