Tasting Notes
Expect a vibrant, youthfully concentrated red with a dark ruby core and inviting aromatic lift. The nose typically leans toward wild berries, garrigue herbs, black cherry, and subtle spice, with the kind of earthy nuance that gives Terrasses du Larzac its signature charm.
On the palate, the wine is usually medium to full-bodied with polished tannins, fresh acidity, and a savoury, mineral-tinged finish. The 2023 vintage should have the structure to develop well over the next several years, while already showing plenty of charm in its youth.
Production
Sourced from the limestone and clay soils of the Terrasses du Larzac, the wine benefits from a terroir shaped by altitude, cool nights, and strong Mediterranean influence tempered by inland freshness. Grapes are generally harvested with care to preserve acidity and aromatic precision, and vinification is typically handled in a way that emphasises purity, texture, and the character of the site rather than heavy extraction.
Food & Serving
This is an excellent match for grilled lamb, slow-roasted duck, herb-crusted beef, ratatouille, or aged hard cheeses. Serve at around 16–18°C. Decanting for 30–60 minutes is recommended, especially if opened young, to allow the wine’s aromas and texture to open fully.
