Extra Brut in style, it delivers precision and tension while still remaining inviting and generous. This non-vintage cuvée reflects the family estate’s long-standing commitment to Pinot Noir, a grape that has shaped the identity and reputation of Champagne’s southern reaches.

Tasting Notes
In the glass, this Blanc de Noirs shows a luminous pale gold color with delicate, persistent bubbles forming a fine, steady mousse. On the nose, expect an enticing mix of red apple, ripe pear, and white peach layered with notes of brioche, hazelnut, and a hint of citrus zest, underscored by subtle chalky and smoky nuances typical of Pinot Noir from this area. The palate is dry and precise, in keeping with its Extra Brut dosage, yet rounded by the natural richness of Pinot Noir. Flavors of baked apple, wild strawberry and Mirabelle plum unfold alongside lemon rind, toasted almond and a gentle spice note. The mousse is creamy but taut, giving the wine both structure and finesse. The finish is long, saline and refreshingly crisp, suggesting a Champagne that drinks beautifully now but can gain additional complexity over the next 3–5 years in bottle.

Production
Sourced from Pinot Noir vines rooted in the limestone and clay-limestone soils of the Champagne region, this cuvée showcases the southern Champagne terroir where the grape reaches full maturity and depth. Grapes are picked by hand at optimal ripeness to preserve freshness and integrity, then gently pressed to obtain clear juice. Fermentation takes place in temperature-controlled vessels to retain aromatic purity, with the blending of different reserve wines adding complexity and consistency across non-vintage releases. The second fermentation occurs in bottle following the traditional méthode champenoise, with extended aging on the lees to develop texture, fine bubbles and subtle brioche notes before disgorgement and a low Extra Brut dosage.

Food & Serving
This Champagne is a versatile partner at the table, pairing beautifully with oysters, scallops, sushi and sashimi, as well as charcuterie, roast chicken, creamy risottos and soft-rind cheeses like Brie or Chaource. Its bright acidity and dry finish cut through richer dishes, while the Pinot Noir backbone lends enough body for more savory fare. Serve well-chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or in a decanter designed for sparkling wine can help the aromas open up, but extended decanting is not necessary—simply pour and allow it to evolve as you sip.
