Maria & Sepp Muster Sauvignon vom Opok Bio 2021 is a deeply characterful, biodynamic Sauvignon Blanc from southern Styria that puts terroir far ahead of flashy aromatics. Instead of the typical perfumed, tropical style, this cuvée highlights texture, minerality and inner tension, shaped by minimal-intervention winemaking. “Vom Opok” refers to the local limestone-marl soils that define the wine’s backbone and give it a distinctly Styrian identity, continuing the Musters’ now decades-long exploration of their unique landscape.

Tasting Notes
In the glass, the 2021 Sauvignon vom Opok typically shows a pale to medium straw color, often with a slight haze due to its unfiltered, low-intervention character. On the nose, expect a quietly expressive, savory style of Sauvignon Blanc: think citrus zest, underripe stone fruit and green apple intertwined with herbal tones, fennel, wet stone, and a subtle smoky, earthy edge rather than overt, tropical fruit. As it opens, gentle notes of blossom, dried herbs and a saline lift come to the fore. On the palate, the wine is taut, linear and textural rather than showy—dry, with vibrant acidity and a finely etched, chalky-mineral grip from the Opok soils. Citrus, crisp pear and green plum are layered with herbal nuances, crushed rock, and a delicate phenolic structure that adds both depth and length. The finish is long, mouthwatering and slightly salty, with a persistent stony echo. Enjoyable now for its energy and tension, it has the structure to evolve gracefully over the next 5–7 years, gaining complexity, softer edges and more pronounced savory notes with time in bottle.

Production
The Sauvignon vom Opok Bio 2021 is sourced from younger Sauvignon Blanc vines, up to around 20 years old, planted on Steiermark’s typical Opok soils—a compact mix of limestone and clay marl that imparts both minerality and structure. The vines are farmed biodynamically and trained in the traditional “Eindrahterziehung,” a single-wire system that allows the plants maximum freedom of growth and deep root penetration into the stony subsoils. Harvest is carried out by hand with careful selection in the vineyard. In the cellar, the grapes are destemmed and gently crushed, then allowed to ferment spontaneously with native yeasts, without temperature control and without any oenological additives, including sulfur. The wine is given ample time on its lees and is raised quietly in neutral vessels, bottled unfiltered and unsulfured, capturing the purest possible expression of variety and site.

Food & Serving
This is a gastronomic, terroir-driven Sauvignon Blanc that pairs beautifully with subtly prepared dishes where texture and minerality can shine. Think freshwater fish, ceviche, oysters and shellfish, as well as vegetable-driven cuisine such as asparagus, fennel, artichokes, grilled zucchini, and herb-laden salads. It works particularly well with goat’s and sheep’s cheeses, light poultry dishes, and delicately spiced Asian or Alpine-inspired fare. Serve at around 10–12 °C (50–54 °F); a brief decant of 15–30 minutes is recommended to let any initial reduction or funk blow off and to allow the wine’s layers of aroma and texture to unfold. Don’t be afraid to serve it in a good white Burgundy or universal stem to highlight its structure and complexity.

Weingut Maria und Sepp Muster is one of the key names in southern Styria’s natural and biodynamic wine movement, based around the village of Leutschach in the Steiermark region of Austria. Farming their steep, terraced vineyards biodynamically for roughly two decades, Maria and Sepp have become reference points for expressing the character of Opok soils through soulful, unmanipulated wines. Their approach is resolutely hands-on in the vineyard and hands-off in the cellar, relying on massale selection, low yields, spontaneous fermentation, and minimal or zero sulfur to capture a vivid sense of place. Today, the Muster estate is widely respected among aficionados of natural and artisanal wines, and their Sauvignon Blancs, in particular, have helped redefine what Styrian Sauvignon can be—textural, mineral and profound rather than merely aromatic.
