Maria & Sepp Muster Opok Bio 2021

Maria & Sepp Muster Opok Bio 2021 is a biodynamic white blend from Styria, shaped less by any one grape variety than by the region’s distinctive Opok soils. Chardonnay, Gelber Muskateller, Sauvignon Blanc and Welschriesling come together in a wine that puts the Musters’ lively, terroir-led style centre stage.

Production
The fruit comes from younger vines, up to 20 years old, rooted in Opok—calcareous marl soils with a relatively high clay content in these vineyards. Grapes are selectively hand-harvested, destemmed and crushed, then gently pressed over four hours. Fermentation begins spontaneously in wooden casks, followed by 20 months of maturation in large oak casks; vineyard and cellar work follow biodynamic principles.

Food & Serving
Try it with roast chicken, freshwater fish, mushroom dishes or creamy vegetable preparations, which can complement its site-driven character without overwhelming it. Serve lightly chilled, around 10–12°C. A brief period in an open glass can help the wine unfold; a long decant is not essential.
