Maria & Sepp Muster Opok Bio 2021 is a biodynamic white field blend that captures the pure essence of southern Styria’s famous Opok soils rather than focusing on any single grape variety. Chardonnay (Morillon), Gelber Muskateller, Sauvignon Blanc, and Welschriesling come together as interpreters of place, channelling the energy and minerality of these limestone-marl slopes. This cuvée has become a reference point for natural, terroir-driven Styrian whites, expressing both the Musters’ philosophy and the character of Opok in an unadorned, authentic way.

Tasting Notes
In the glass, the Opok Bio 2021 typically shows a slightly hazy, straw to pale golden hue, reflecting its minimal intervention upbringing and long élevage. The nose is quietly complex rather than overtly fruity: notes of wild herbs, hay, citrus zest, delicate stone fruit, and subtle floral tones from the Gelber Muskateller mingle with a distinct stony, chalky minerality and a faint hint of lees and spice from the time in large oak. On the palate, this is all about texture and tension rather than showy aromatics. The Sauvignon Blanc and Welschriesling bring a lively, mouthwatering acidity, while the Chardonnay provides a fine, supple mid-palate and a gentle creaminess without heaviness. Expect layers of citrus, green and yellow orchard fruit, herbal nuances, and a salty, limestone-driven backbone that stretches into a long, slightly savory finish. The wine is vibrant and alive, with a subtle, unpolished wildness typical of Muster’s style. While approachable in its youth after some air, it has the structure and minerality to evolve gracefully for 5–8 years or more, gaining further complexity and integration.

Production
The Opok Bio 2021 is grown on the region’s emblematic Opok soils – a compact mix of limestone, marl and clay with a higher clay content in this particular site – which lends both mineral precision and a deep, earthy energy to the wine. The vineyards are farmed according to biodynamic principles, with careful attention to soil health, biodiversity, and the rhythms of nature, and all grapes are selectively hand-harvested from younger vines up to around 20 years old. After picking, the bunches are destemmed and gently crushed, followed by a slow, gentle pressing over about four hours to preserve nuance and vitality. Fermentation occurs spontaneously with native yeasts in large wooden casks, and the wine then matures for roughly 20 months in large old oak, remaining on its lees to build texture and complexity before being bottled with minimal intervention.

Food & Serving
This Styrian field blend is highly food-friendly and shines with dishes that mirror its freshness and subtle complexity. Try it with freshwater fish, trout or char, light poultry, vegetable-driven cuisine, seasonal salads with herbs, soft goat’s cheese, alpine cheeses, or delicately spiced Asian-inspired dishes that emphasize aromatics rather than heat. It also pairs beautifully with mushroom dishes and simple preparations of root vegetables or asparagus. Serve at around 10–12°C (50–54°F) to highlight both texture and aromatics. A short decant of 20–30 minutes, or simply letting the wine open in the glass, helps it shed any initial reduction and fully reveal its layered, mineral character.

Weingut Maria und Sepp Muster is one of the key names in southern Styria’s natural and biodynamic wine movement, based near Leutschach in the rolling hills close to the Slovenian border. Since taking over the family estate, Maria and Sepp have become known for their uncompromising focus on expressing the Opok soils and the unique microclimate of their steep, terraced vineyards through low-intervention farming and cellar work. They were early adopters of biodynamics in the region, working with minimal treatments, manual vineyard care, and spontaneous fermentations long before such practices were widely embraced. Today, their wines are highly regarded among enthusiasts of natural and terroir-driven wines worldwide, celebrated for their authenticity, vitality, and distinctive Styrian character.
