Maria & Sepp Muster Graf Morillon Bio 2021 is a striking, single-varietal Chardonnay (locally known as Morillon) from the rolling hills of Styria in southern Austria. Crafted from the estate’s oldest, low-yielding vines, it offers a concentrated yet finely etched expression of its limestone-rich soils. The “Graf” cuvée revives the historic name of the Muster family estate, honoring centuries of winemaking tradition with a decidedly artisan, natural approach.

Tasting Notes
In the glass, Graf Morillon 2021 shows a luminous straw to pale gold hue, with a gentle, natural haze that hints at its unfiltered character. The nose unfolds slowly, especially with air: expect layers of ripe orchard fruit—pear, apple, and yellow plum—woven with notes of lemon zest, chamomile, crushed stone, and a subtle, savory nuttiness from its long aging in large oak. On the palate, the wine is textural and deep rather than flashy, with a firm mineral backbone and a finely balanced, vibrant acidity. Flavors of baked apple, quince, and Meyer lemon are lifted by hints of herbal spice, white flowers, and a delicate saline edge. The long elevage in large wood brings gentle rounding and complexity, without overt oakiness. This is a wine that benefits from time in the glass: it opens and broadens, gaining creaminess and savory depth over the course of an evening. Well-made natural wines from Muster’s old vines can age gracefully; this 2021 should evolve positively for 6–10 years from vintage, gaining more nutty, honeyed and tertiary notes while retaining its mineral core.

Production
The grapes for Graf Morillon Bio 2021 come from the Musters’ oldest Chardonnay (Morillon) parcels, planted on poor, stony soils around their historic estate in Styria. These meager, limestone-influenced plots naturally limit yields, concentrating flavor and emphasizing mineral tension. All fruit is carefully and selectively harvested by hand, ensuring only perfectly ripe and healthy bunches make it to the cellar. After picking, the grapes are destemmed and gently crushed, then pressed very slowly and delicately over about four hours to preserve finesse. Fermentation occurs spontaneously with indigenous yeasts in large wooden casks, with no fining, filtration, or added enological products. The wine is then allowed to mature for a full two years in large oak, resting on its lees to build texture and complexity, before being bottled without sulfur addition, maintaining the purest possible expression of site and grape.

Food & Serving
This nuanced Morillon pairs beautifully with subtly rich, savory dishes that echo its texture and minerality. Think roasted free-range chicken with herbs, trout or char with brown butter and capers, seared scallops, creamy risottos with wild mushrooms, or alpine cheeses and charcuterie. It also works well with vegetable-driven plates like roasted root vegetables, fennel gratin, or pumpkin gnocchi with sage. Serve slightly cooler than room temperature—around 11–13°C (52–55°F)—rather than fridge-cold, to allow the aromatics and texture to fully reveal themselves. Decant for 30–60 minutes, especially in its youth, and don’t hesitate to pour into larger-bowled white wine or even Burgundy-style glasses to encourage the wine’s evolution in the glass.
