Description
Leon Domecq Oloroso Señorío de Callao is a classic dry Oloroso from one of Jerez’s most historic bodegas, crafted from 100% Palomino and fortified to 20% ABV. This is a richly layered, long‑aged sherry that showcases the depth and intensity only traditional Andalusian soleras can deliver. It is a wine for slow contemplation, offering old‑world character with a distinctly refined, modern drinkability.
Tasting Notes
In the glass, this Oloroso shows a deep mahogany hue with amber and copper highlights, clinging to the sides with slow, glyceric legs that hint at its concentration. The nose is complex and expressive, with aromas of toasted walnuts, hazelnuts, polished wood, dried orange peel, figs, toffee and a gentle waft of noble oxidation, underpinned by subtle spice and a touch of varnished oak.
On the palate, it is dry, powerful and expansive, yet remarkably balanced. Layers of roasted nuts, salted caramel, balsamic notes, leather and dried fruits unfold across the tongue, carried by a firm but integrated alcohol warmth. The texture is broad and silky, with a long, savoury finish marked by umami, toasted almonds and a lingering saline edge reminiscent of the Atlantic influence on Jerez. As a non‑vintage, long‑aged Oloroso drawn from a traditional solera, it is bottled ready to drink, with no need for further aging in bottle, though it will hold beautifully for years if stored correctly once opened.
Production
Sourced from the classic albariza soils of the Macharnudo zone near Jerez, Leon Domecq Oloroso Señorío de Callao reflects one of the most historic pagos of the Jerez-Xérès-Sherry region. The Palomino grapes are harvested with careful selection to ensure optimum ripeness and concentration, then gently pressed to obtain the finest must. After fermentation to a dry base wine, the wine is fortified to around 20% and aged oxidatively in seasoned oak butts within the traditional bodega at Calle Justicia 28. The wine matures for many years in a dynamic solera and criadera system, slowly concentrating in flavour and texture as it evolves under controlled exposure to oxygen, yielding the deep colour, nutty complexity and signature intensity of a classic Oloroso.
Food & Serving
This Oloroso is a brilliant partner for rich, savoury dishes: think cured Manchego, aged Comté, jamón ibérico, game terrines, slow‑braised beef or oxtail, roasted mushrooms, and dishes with truffle or deeply reduced sauces. It also pairs beautifully with mature hard cheeses or slightly sweet elements like glazed pork or blue cheese with walnuts. Serve lightly chilled, around 14–16°C (57–61°F), to allow the aromatics to fully express themselves. Decanting for 15–30 minutes is optional but can help the wine open up even further, especially if the bottle has been stored for some time. Once opened, it will keep well for several weeks in the refrigerator, retaining its structure and character.
