Leon Domecq Amontillado Señorio de Callao is a classic dry Amontillado from the heart of Jerez, crafted entirely from Palomino grapes and bottled at 18% for depth and intensity. Drawn from century‑old soleras and matured in traditional bodegas in one of the city’s most historic quarters, it offers an authentic taste of Andalusian sherry heritage. This wine stands out for its layered complexity, saline finesse and long, nutty finish that only patient oxidative aging can deliver.

Tasting Notes
In the glass, this Amontillado shows a luminous amber to deep topaz hue, with copper and golden flashes that hint at extended aging in cask. The nose is lifted and expressive, with toasted hazelnuts and almonds, dried orange peel, varnished wood, and subtle notes of chamomile, toffee, and a whisper of sea breeze. On the palate, it is dry, elegant and concentrated, with a silky, almost glyceric texture balanced by vibrant acidity and a persistent savory backbone. Flavors of roasted nuts, salted caramel, dried figs, and citrus zest unfold gradually, supported by gentle oxidative tones of old wood and polished leather. The finish is long, clean and subtly salty, making it both contemplative on its own and extremely food‑friendly. Properly stored, this non‑vintage Amontillado will hold and even gain nuance for many years after release, remaining stable once opened for several weeks if kept cool and sealed.

Production
Leon Domecq Amontillado Señorio de Callao is rooted in the classic albariza soils of the historic Macharnudo terroir, one of the most revered pagos in the Jerez-Xérès-Sherry region. Here, the chalk-rich, white limestone earth and Atlantic influence provide the ideal conditions for Palomino grapes with finesse, salinity and structure. Grapes are typically harvested by hand to preserve fruit integrity, then gently pressed and vinified to a base wine that initially ages under flor as a Fino before transitioning to oxidative aging when the flor naturally fades or the wine is fortified to a higher strength. The wine is then matured for many years in seasoned American oak butts using the traditional solera and criadera system, slowly gaining complexity, concentration and its characteristic amber color while maintaining a precise, elegant profile.

Food & Serving
This Amontillado is a versatile partner at the table, shining alongside mature hard cheeses (Manchego, Comté), jamón ibérico, charcuterie, mushroom dishes, game terrines and richly flavored poultry such as roast chicken or turkey with gravy. It also pairs beautifully with umami‑driven plates like consommé, aged cheeses, and Asian dishes featuring soy, mushrooms or sesame. Serve slightly cool, around 14–16°C (57–61°F), to showcase both its aromatic intensity and textural richness. A brief decant of 15–20 minutes in a small carafe or simply in the glass helps the wine open up and reveal its full aromatic spectrum.

Bodegas León Domecq is an historic Jerez house, tracing its roots back to 1850 in one of the city’s most authentic quarters, with its cellars on Calle Justicia 28. The bodega’s history is intertwined with the famed ‘La Compañía’ vineyard on the road from Jerez to Trebujena, near the El Majuelo estate in the celebrated Macharnudo terroir—long regarded as one of the great sources of classic sherry. Heirs to generations of sherry expertise, including the influential Tomás Domecq Rivero who helped raise Sherry’s reputation on the world stage, the family has preserved and revived an extraordinary patrimony of old soleras and wines. Today, Bodegas León Domecq is recognized as a guardian of traditional Jerez craftsmanship, producing limited, characterful sherries that reflect both their historic vineyards and the timeless practices of the region.
