Tasting Notes
In the glass, Io Sono Gaia shows a luminous straw-yellow color with greenish highlights that hint at its vibrant acidity and youth. The nose opens with lifted aromas of citrus zest, green apple, and white peach, layered with wild herbs, fennel fronds, and a subtle saline breeze that evokes its Adriatic proximity.
On the palate, the wine is medium-bodied yet concentrated, with a precise core of lemon, pear, and crunchy stone fruit framed by savory notes of sage, chamomile, and a gentle nuttiness. A firm, almost saline minerality runs through the mid-palate, giving tension and length to the wine. The finish is clean, long, and mouthwatering, with Pecorino’s trademark combination of freshness and grip. While delicious now for its vibrant fruit and energy, it has the structure and acidity to evolve gracefully for 3–5 years, gaining more herbal, honeyed, and textural complexity with time in bottle.
Production
Le Caniette Azienda Agricola farms its vineyards in the sun-soaked hills of the southern Marche, where the clay-limestone soils, sea breezes from the nearby Adriatic, and marked day–night temperature shifts help Pecorino retain both aromatic intensity and crisp acidity. Grapes for Io Sono Gaia are typically harvested by hand at optimal ripeness to preserve the delicate balance between fruit concentration and freshness. In the cellar, the fruit is gently pressed and fermented at controlled temperatures in stainless steel to highlight purity and varietal character, often followed by a short period on fine lees to enhance texture, mid-palate richness, and complexity without overwhelming the wine’s natural precision.
Food & Serving
This Offida Pecorino is a natural partner for seafood of all kinds—think crudo, oysters, grilled shellfish, and simply prepared white fish with lemon and herbs. It also pairs beautifully with seafood pastas, risotti, young pecorino cheese, vegetable-based dishes, and lightly spiced Asian cuisine where brightness and salinity are welcome. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatics and mineral notes to fully emerge. Decanting is not essential, but opening the bottle 15–20 minutes before serving and pouring into larger white wine glasses will help the wine unfold its layers.
