Larmandier-Bernier Les Chemins d'Avize Champagne Grand Cru Blanc de Blancs Bio 2016

Larmandier-Bernier’s Les Chemins d’Avize is a biodynamic, single-vineyard Blanc de Blancs from two plots in the Grand Cru village of Avize. Made exclusively from Chardonnay, this Extra Brut Champagne showcases the Côte des Blancs’ chalk-rich character through old vines, restrained dosage and extended ageing.

Tasting Notes
Expect a pale golden colour and a focused, mineral-led profile. Chalk and citrus are natural markers of Avize Chardonnay; the very low dosage allows the wine’s freshness and sense of place to come through without noticeable sweetness.

Production
The roughly 50-year-old vines grow in sparse soils where Campanian chalk reaches close to the surface. Grapes are hand-harvested and gently pressed; the lightly settled juice ferments spontaneously in Stockinger oak barrels and undergoes malolactic fermentation. The base wine matures on its lees in barrel before bottling for its second fermentation and extended ageing. It is disgorged by hand and finished with a modest dosage of 2 g/l.

Food & Serving
Serve around 10–12°C in a white wine glass to give the wine room to open. Its chalky, dry style suits oysters, scallops, grilled lobster and simply prepared white fish. Decanting is not essential, but a brief rest in a carafe or an open glass can help reveal its aromas.
