Description
La Scolca Soldati Metodo Classico Pas Dosè is a refined, traditional-method sparkling wine made entirely from Cortese, the emblematic grape of Gavi in Piemonte. Bone-dry and uncompromisingly pure, it is crafted without any dosage, allowing the grape, terroir and long bottle aging to speak clearly in the glass. This cuvée pays homage to La Scolca’s pioneering role in elevating Cortese from a simple local variety to one of Italy’s most respected white grapes.
Tasting Notes
In the glass, this Pas Dosè shows a luminous straw-yellow color with fine, persistent bubbles forming a delicate, continuous bead. The appearance is elegant and vibrant, hinting at both freshness and structure.
On the nose, subtle notes of fresh bread crust and delicate yeast mingle with hints of wildflower honey, dried herbs and gentle spice. With air, aromas of citrus zest, white peach and a touch of almond emerge. The palate is razor-clean and dry, with the absence of dosage highlighting the citrus and mineral core of Cortese. Flavors of lemon peel, green apple and pear are layered over nuances of toasted brioche and light honey, leading to a long, saline, almost chalky finish. The firm acidity and fine mousse give it excellent aging potential; while delicious now for its tension and precision, it can develop additional complexity and creaminess over the next 3–5 years, and potentially longer under optimal cellaring.
Production
This Metodo Classico Pas Dosè is born from Cortese vines rooted in the rolling hills of Piemonte, where a mix of mineral-rich soils, good drainage and significant diurnal temperature swings help preserve acidity and aromatic finesse. Grapes are carefully hand-harvested at optimal ripeness to balance freshness with flavor concentration. After a gentle pressing, the base wine is vinified with great precision, followed by secondary fermentation in the bottle according to the traditional method. The wine then rests on its lees for over 24 months, gaining depth, fine bubbles and those characteristic notes of yeast and bread crust. At disgorgement, no expedition liqueur is added, resulting in a pure, Pas Dosè expression of Cortese and its terroir.
Food & Serving
This bone-dry sparkling Cortese is a superb partner to delicate seafood dishes such as oysters, scallop crudo, prawns, and simply grilled fish, as well as sushi, sashimi and light vegetable tempura. It also pairs beautifully with fresh goat cheese, young pecorino, and refined antipasti like vitello tonnato or fennel and citrus salad. Serve well-chilled at 6–8°C (43–46°F) to emphasize its freshness and finesse. A brief 10–15 minutes in the glass or in an open bottle is enough to let the aromas unfold; extended decanting is not necessary, though pouring into a wider tulip-shaped flute or white wine glass will enhance its complexity.
