Tasting Notes
In the glass, it shows a ruby-red color with violet reflections, signalling both freshness and ripeness. The nose is expressive, with aromas of black fruits, cassis, dried plums, vanilla and subtle floral notes.
On the palate, this is a full-bodied and flavorful Cabernet Sauvignon with ripe, juicy fruit, good structure and a smooth, satisfying finish. The 2022 vintage is approachable now, but it should also hold well over the next few years as the tannins integrate further.
Production
The grapes come from Chile’s Maipo Valley, a region known for producing Cabernet Sauvignon with excellent ripeness, concentration and balance. Domaine William Fèvre works in a French style, with vineyards that benefit from Chile’s ideal climate and, in some cases, cooler high-altitude sites that help preserve freshness and aromatic lift. The result is a wine made from healthy, fully mature fruit, vinified to emphasize purity, richness and structure.
Food & Serving
This Cabernet Sauvignon pairs beautifully with beef, lamb and lighter meat dishes such as roasted chicken or veal. Serve it slightly below room temperature, ideally around 16–18°C, to let the fruit and structure show at their best. Decanting for 30–60 minutes is recommended, especially if opening young, to soften the tannins and open up the aromas.
Producer
Domaine William Fèvre began in Chablis, France, where the Fèvre family built a reputation for producing benchmark wines before expanding to Chile’s Maipo Valley. The move brought French winemaking principles to a region ideally suited to ripe, expressive wines, and the domaine has since become known for offering excellent quality and value across both white and red styles. Its vineyards and later expansion into cooler southern Chile reflect an ongoing commitment to precision, freshness and regional expression.
