Tasting Notes
In the glass, La Conseillante 2019 shows a deep, vibrant ruby-purple hue that hints at both concentration and freshness. The nose is strikingly perfumed: ripe raspberries and plums mingle with violets, raw cocoa, sweet earth and a touch of licorice, all subtly framed by finely integrated new French oak. On the palate, the wine is full-bodied yet beautifully controlled, with a broad, enveloping attack that glides into a silky, layered mid-palate. Juicy red and dark fruits are lifted by lively acidity, while powdery, ultra-fine tannins give both structure and elegance. There’s a notable salinity and mineral edge on the long, persistent finish, adding complexity and tension. This is a wine built for longevity; it should start to show its charms within 5–7 years of the vintage and has the potential to evolve gracefully in bottle for 20+ years.

Production
La Conseillante sits on Pomerol’s prized plateau, where gravelly, clay-rich and iron-tinged soils provide ideal conditions for Merlot, complemented by Cabernet Franc that adds lift and aromatic detail. Grapes are typically harvested by hand, parcel by parcel, with rigorous selection to capture optimal ripeness and purity of fruit. Vinification takes place in temperature-controlled vats, often a mix of concrete and stainless steel to preserve precision and freshness, followed by élevage in French oak barrels, a significant portion of which are new, to contribute subtle spice and texture without overwhelming the wine’s inherent perfume and finesse.

La Conseillante 2019 shines alongside refined dishes that echo its depth and elegance: think roast lamb with herbs, veal tenderloin, duck breast, or classic beef dishes with truffle or mushroom accents. It also pairs beautifully with game birds, earthy lentil preparations, and aged hard cheeses. Serve at 16–18°C (about 60–64°F) to show its aromatic complexity and textural finesse. Decanting for 2–3 hours in its youth helps the wine open up; as it gains bottle age, a gentler, shorter decant mainly to remove sediment will be sufficient.
