Why shop with us?
Jean-Paul & Benoît Droin’s Chablis Grand Cru Valmur is a dry Chardonnay from one of Chablis’s most prestigious vineyard sites, prized for combining impressive structure with a distinctly mineral character. Valmur’s long-standing Grand Cru status and expressive Kimmeridgian soils give this bottling a sense of place as well as the depth to develop with age.
Tasting Notes
The wine is expected to show a pale golden hue, with aromas of peach and apricot lifted by quince and fresh hawthorn. On the palate, it is powerful and finely structured, with a firm, mineral-driven depth and the restrained elegance associated with Chablis.
With suitable cellaring, it has the potential to mature for more than ten years, gaining complexity over time.
Production
Valmur enjoys a south- to southwest-facing exposure. Its slope is formed largely of Kimmeridgian marl, with deeper, browner soils lower down and lighter, more clay-rich soils higher up. The grapes are pneumatically pressed, and the must is settled naturally with enzymes before spontaneous fermentation with native yeasts. Fermentation takes place in a combination of stainless-steel tanks and oak barrels; malolactic fermentation softens the profile. After eight to ten months of maturation, the lots are blended, with fining and light filtration if needed before bottling.
Food & Serving
Serve at around 10–12°C with lobster, poultry or other light meats in a creamy sauce, or mature cheeses. Decanting is not essential; for a young bottle, a brief airing in the glass can help open its aromas without diminishing its freshness.
Producer
Domaine Jean-Paul & Benoît Droin is a long-established family estate in Chablis, with a history of winegrowing in the region dating back to the seventeenth century. Benoît Droin joined his father Jean-Paul at the domaine in the late 1990s, continuing its focus on expressing Chablis’s individual vineyard sites. The estate is regarded as one of the region’s leading producers.
