Jean-Paul & Benoît Droin’s Chablis is a dry, Chardonnay-only white wine shaped by the region’s cool northern Burgundy climate and distinctive Kimmeridgian soils. Its clean, mineral style, with citrus freshness and subtle floral character, offers a classic expression of Chablis and its marine-fossil-rich terroir.

Production
The vines grow in shallow soils of grey marl and limestone, with Kimmeridgian layers rich in Exogyra virgula fossils—a geological feature associated with Chablis’s characteristic mineral character. The grapes are pneumatically pressed, naturally clarified and fermented with indigenous yeasts in stainless-steel tanks; malolactic fermentation helps balance the wine’s acidity. It is matured in tank for eight to ten months before blending. Harvesting details are not provided.
