Why shop with us?
Jean-Paul & Benoît Droin’s Chablis Premier Cru Montée de Tonnerre is a precise, mineral-driven Chardonnay from one of Chablis’s most celebrated Premier Cru sites. Its combination of white-fruit and floral character with a distinctly saline finish reflects the region’s fossil-rich Kimmeridgian soils.
Tasting Notes
The wine is described as refined and layered, with aromas of white fruit and flowers, joined by subtle hints of menthol, brioche and sweet spice. On the palate, lively freshness meets a pronounced saline minerality, with oyster-shell and flint notes carrying through to a persistent finish.
Its freshness and structure suggest good potential to develop in bottle over several years, gaining further complexity with time. Exact ageing potential will depend on the 2025 vintage and its development.
Production
The Chardonnay comes from vines around 50 years old on a west-facing parcel with shallow soils. Ochre-toned Kimmeridgian marl, small stones rich in fossilised Exogyra virgula oysters and seams of blue clay shape the site’s distinctive mineral character. After pneumatic pressing and natural settling, the must ferments with indigenous yeasts in a combination of stainless steel tanks and barrels. Following malolactic fermentation, the wine rests for eight to ten months before blending and light filtration.
Food & Serving
Serve at around 10–12°C with shellfish, oysters, grilled lobster or simply prepared white fish. Its saline freshness also suits dishes with a touch of butter or cream. A brief rest in the glass should be enough when young; decanting is optional, but a short decant can help the wine open up.
