Description
Jean-Paul & Benoît Droin’s 2024 Chablis Premier Cru Vaillons pairs generous stone-fruit character with the cool, mineral precision of Chablis. Made from Chardonnay, it comes from a Premier Cru site whose reputation reflects the region’s long history of producing distinctive, age-worthy white wines.
Tasting Notes
The nose is cool and stone-marked, with apricot and peach emerging on the palate alongside a bright note of lemon. The opening is generous, then turns lighter and more vibrant toward the finish, where the fruit lingers. Give this young wine time in bottle for its aromas to develop further.
Production
Vaillons is a Premier Cru vineyard in Chablis, where limestone-rich soils contribute to the region’s characteristic mineral profile. A portion of the wine is matured in oak barrels, adding texture. Harvesting and further vinification details are not available.
Food & Serving
Try it with oysters, scallops, grilled fish or roast chicken. Serve lightly chilled, around 10–12°C. A young bottle can be opened ahead of serving; decanting is optional, but a little air may help its aromas unfold.
