Built around a single base vintage and refined with carefully judged reserve wines, N°747 offers a precise, terroir-driven expression rather than a “one-size-fits-all” house style. Officially the domaine’s “entry” cuvée, it consistently performs at a level that rivals many prestige bottlings from other producers.
Tasting Notes
In the glass, N°747 shows a luminous, pale gold hue with a fine, persistent bead that speaks to its extended lees aging. The nose is tense yet generous, opening with ripe citrus and crisp orchard fruits—think lemon zest, yellow apple and pear—layered with white flowers, chalky minerality, and delicate notes of brioche, toasted nuts and a touch of spice.
On the palate, this Extra-Brut is focused, dry and beautifully structured, with Chardonnay providing tension and lift while Pinot Noir and Pinot Meunier contribute depth, red-fruited nuances and a supple mid-palate. Flavors of citrus, baked apple, quince and stone fruit mingle with hints of almond, fresh bread and a saline, almost maritime finish. The low dosage underscores the wine’s precision and minerality without ever feeling austere. Enjoyable now for its vibrancy and energy, N°747 has the concentration and backbone to evolve gracefully over 5–10 years, developing more complexity, creaminess and savory nuances with time in bottle.
Production
N°747 is crafted from fruit grown in some of Champagne’s finest crus, particularly in the villages of Aÿ, Dizy, Hautvillers (Vallée de la Marne) and Avize and Oiry (Côte des Blancs), where chalk-rich soils and cool climate yield grapes of striking tension and purity. Vineyards are farmed with great care, emphasizing low yields and meticulous work in the vines; harvest is done by hand to ensure only perfectly ripe, healthy bunches are selected. The cuvée is built primarily on a single base year, to which a proportion of high-quality reserve wines is added, highlighting the character of the vintage rather than masking it. Fermentation often takes place in large oak foudres and stainless steel, followed by extended aging on the lees in bottle to build texture, complexity and finesse before disgorgement with a very low Extra-Brut dosage.
Food & Serving
This Champagne is a superb partner for refined seafood dishes such as oysters, scallop carpaccio, lobster, or turbot with beurre blanc, as well as sushi and sashimi where purity and texture are key. Its structure and subtle richness also make it a fine match for roast chicken, veal in light cream sauces, truffle-infused dishes, and aged hard cheeses like Comté or Parmesan. Serve well chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatics to unfold. A brief 10–15 minutes in the glass or a quick, gentle decant into a chilled carafe can help N°747 open up, especially in its youth.

Under the stewardship of brothers Jean-Hervé and Laurent Chiquet since the late 1980s, the domaine has undergone a quiet revolution, focusing on low yields, meticulous vineyard work and a radically terroir-driven philosophy.
