Ippolito 1845 Pecorello is a distinctive Calabrian white that showcases one of the region’s most interesting native grapes in a fresh, elegant style. Produced by one of Calabria’s oldest wineries, it reflects a long-standing commitment to preserving local varietals and expressing the character of southern Italy.

Tasting Notes
Pale straw in the glass, this wine opens with a complex Mediterranean bouquet marked by citrus, yellow fruit, and a fine mineral edge. Production
Made from 100% Pecorello, the grapes were hand-harvested in early September from Calabria’s IGT vineyards, where warm Mediterranean conditions are tempered by coastal influences and the region’s varied soils. Vinification includes cold static settling followed by fermentation in stainless steel at controlled temperatures, with aging in stainless steel until the end of January to preserve freshness and aromatic precision.

This wine pairs beautifully with seafood, grilled fish, shellfish, light pasta dishes, and vegetable-based Mediterranean cuisine. Serve chilled at around 8–10°C; decanting is not necessary, though a short period in the glass can help раскры the wine’s aromatic complexity.
