Tasting Notes
In the glass, the 2019 Drei Sterne shows a luminous, medium ruby color with a slight translucence, hinting at its finesse-driven style rather than sheer power. The nose opens with pure, vibrant red berries – particularly raspberry and raspberry seed – layered with a subtle earthiness. Aromas of white pepper, dried herbs, and a touch of forest floor and fresh mushrooms add complexity and keep the wine firmly grounded in cool-climate character.
On the palate, the red fruit carries through with a sweet-toned but dry impression: ripe raspberries harmonize with a discreet cherry note. Initially, there is a gentle influence of oak – a whisper of toast and spice – but this integrates quickly as air brings the fruit and savory notes into balance. Production
The Pinot Noir *** Drei Sterne 2019 is sourced from higher-altitude vineyards in Baden, where cooler temperatures and good air circulation help preserve acidity and aromatic precision in Spätburgunder. The soils here, typically a mix of loess, limestone and weathered stone, encourage deep rooting and contribute to both minerality and finesse in the finished wine. After careful hand-harvesting, around 50% of the grapes are destemmed while the remainder is fermented as whole clusters, bringing additional aromatic lift and a finely woven tannic structure. Fermentation takes place with gentle extraction to protect the delicate Pinot fruit. The wine is then aged in a mix of new and used wooden casks of various sizes, including barriques, allowing it to gain texture and complexity without overwhelming the fruit, before being bottled with minimal intervention to preserve its sense of place.
Food & Serving
This is a versatile food wine that shines with dishes that echo its elegance rather than overpower it. Think roast duck or guinea fowl with herbs, veal or pork tenderloin, mushroom risotto, or pasta with wild mushrooms and fresh thyme. It also pairs beautifully with mild to medium-soft cheeses such as Tomme, Reblochon-style cheeses, or a lightly aged Gouda. Serve at 14–16°C to highlight its aromatics and fine structure; too warm, and the oak and alcohol can overshadow the nuance. A short decant of 30–60 minutes, or simply giving it time to open in the glass, will help the initial wood influence recede and allow the red fruit and savory notes to fully emerge.
