Tasting Notes
In the glass, Highland Park Ice Edition shows a bright, clear, pale gold hue with a crystalline brilliance that echoes its name. Swirl the glass and the whisky clings elegantly to the sides, hinting at both texture and concentration. The nose is immediately cooling and vibrant, with aromas of fresh pineapple, ripe mango sorbet and a subtle arctic freshness that gives an almost icy impression. Behind the fruit lies a delicate veil of smoke, ginger spice and a touch of oak-driven vanilla. On the palate, this whisky is powerful and elemental, evoking the giants of Norse legend: waves of gentle peat smoke, vanilla pod, ginger warmth and sweet tropical fruit are wrapped in layers of spice and seasoned oak. Crafted on the remote Orkney Islands off the north coast of Scotland, Highland Park Ice Edition is shaped by a cool, maritime climate, relentless North Atlantic winds and mineral-rich, heathery peat—an environment that lends a distinctive character to the spirit. Highland Park continues to adhere to traditional methods dating back to its founding in 1798, including hand-turning malt on the distillery’s own malting floors and carefully managing slow, cool fermentation to build complexity. The whisky is distilled in copper pot stills and matured for 17 years in carefully selected oak casks, likely with a strong emphasis on seasoned oak that enhances the balance of fruit, smoke and spice. Every step of production is guided by Highland Park’s philosophy of never changing their process unless it improves quality, resulting in a meticulously crafted, limited-release single malt.

Food & Serving
Highland Park Ice Edition is a contemplative dram that shines when enjoyed neat, ideally at a serving temperature around 16–20°C (60–68°F). A few drops of cool, still water can help open up the tropical fruit and spice notes without muting the smoke. If you wish to pair it with food, try rich, slightly sweet and subtly smoky dishes: glazed pork belly, chargrilled shellfish, mature hard cheeses, smoked almonds or dark chocolate with ginger and sea salt. Decanting is not necessary, but pouring the whisky into a quality tulip-shaped glass and allowing it to rest for 5–10 minutes will help the cooler fruit, ginger and gentle peat smoke fully emerge.
