Tasting Notes
Pale straw in the glass, this wine opens with a bright, expressive nose of citrus peel, ripe summer fruit, white flowers, aromatic herbs, capers, and green olive, all carried by a subtle maritime edge. On the palate it is energetic and inviting, with a fresh, savoury flow and a dynamic balance between fruit, salinity, and tension. The finish is long and clean, leaving citrus and saline echoes that linger nicely. It should drink beautifully young for its freshness, though a few years in bottle may add extra texture and nuance.

Produced in Etna DOC on the volcanic soils of Sicily’s eastern side, this wine reflects the altitude, mineral intensity, and coastal influence that define the area. The blend of 80% Carricante and 20% Catarratto Bianco Comune is crafted to preserve aromatic clarity and freshness, with vinification focused on capturing purity of fruit and the terroir-driven saline character that is so typical of Etna whites.

A natural match for grilled fish, shellfish, sashimi, sea urchin pasta, vegetable risotto, and Mediterranean dishes with herbs, olives, or capers. Serve chilled at around 8–10°C to highlight its precision and aromatics; decanting is not necessary, though a short period in the glass can help the wine open beautifully.
