González Byass Leonor Palo Cortado is a rare and highly refined style of Sherry, combining the freshness and precision of a Fino with the depth of an Oloroso. Made from 100% Palomino Fino and aged for an average of 12 years in the traditional solera system, it offers an intriguing balance of elegance, intensity and oxidative complexity.
Tasting Notes
In the glass, Leonor shows a deep amber to mahogany colour. Its expressive nose reveals walnut, orange peel, dried fruit, salted caramel and a subtle hint of toasted almond and smoke. The palate is dry, focused and beautifully layered, combining vibrant freshness with a silky texture and remarkable depth. Elegant bitterness adds definition to the finish, while lingering notes of nuts, citrus, wax and a gently developing mineral character remain on the palate.
The wine is powerful without feeling heavy, and complex without becoming demanding. Its 12 years of maturation have brought composure, warmth and a finely developed aromatic profile. As a fortified Sherry, it is ready to enjoy now and should remain stable for many years when stored in a cool, dark place; once opened, refrigeration is recommended for preserving its freshness.
Production
Produced from 100% Palomino Fino in Andalucía, Leonor begins its life in the Fino style before developing toward the oxidative character of Palo Cortado—one of the most intriguing and naturally mysterious transitions in the world of Sherry. It is matured for an average of 12 years in a traditional solera system, allowing the wine to gain texture, depth and aromatic complexity over time. Specific harvesting methods and vineyard details are not provided.
Food & Serving
Serve lightly chilled, ideally at around 12–14°C. Its dry, nutty profile is an excellent match for Iberian ham, tapas, mature and hard cheeses, mushroom dishes, consommé and roasted root vegetables with a touch of caramelisation. It is also superb on its own, enjoyed slowly in a small wine glass. Decanting is generally unnecessary, although allowing it a few minutes to breathe after opening can help reveal its full aromatic range.
Producer
Founded in Jerez in 1835, González Byass is one of Spain’s most recognised Sherry houses and is closely associated with the international success of Andalusian fortified wines. The producer is best known for its iconic Tío Pepe Fino, while its broader range demonstrates the remarkable diversity of Sherry styles. Leonor Palo Cortado reflects the house’s expertise in long solera maturation and in crafting wines that balance freshness, finesse and profound oxidative depth.
