Tasting Notes
In the glass, it shows a deep ruby colour with garnet reflections, hinting at both richness and maturity. The nose is intensely layered, with cherry, pomegranate, and dark berry fruit joined by dried herbs, balsamic notes, and subtle floral nuances. The palate is full-bodied and concentrated, yet remarkably silky in texture. Bright acidity keeps the wine vibrant, while perfectly integrated tannins provide structure and length; the finish is long and elegant, with lingering fruit and spice. This is a wine with excellent aging potential and will continue to develop complexity over many years.

Production
Rosso Ca’ del Merlo comes from Quintarelli’s iconic estate in Veneto, where tradition and meticulous attention to detail define every step of production. The wine is crafted from a blend of Corvina, Corvinone, Rondinella, Cabernet, and Merlot, and made using the traditional ripasso method, meaning the wine undergoes a second fermentation on the grape skins left after Amarone production. It is then aged for seven years in large Slovenian oak casks, a slow maturation that adds depth, balance, and remarkable complexity.

Food & Serving
This is a superb match for game, rich meat dishes, braised beef, and mature cheeses, where its structure and savoury depth can shine. Serve at around 16–18°C, and consider decanting for at least an hour to allow the wine’s aromas and layered texture to खुल fully open.
