Tasting Notes
In the glass, this Primitivo shows a deep ruby-red color with purple highlights, hinting at its youthful vibrancy and concentration. The nose is immediately expressive, with ripe blackberries, dark cherries, and plum compote layered over notes of sweet spices, licorice, and a touch of Mediterranean herbs. On the palate, the wine is full-bodied and generous, with plush dark fruit at the core—black cherry, blackberry, and blackcurrant—supported by nuances of cocoa, vanilla, and a gentle hint of black pepper. Sourced from selected vineyards in Salento, Apulia, Gianfranco Fino Se Primitivo reflects the warm, dry Mediterranean climate and limestone-rich soils that naturally limit yields and enhance flavor concentration. The vines benefit from sea breezes that temper the heat, helping to preserve freshness in the grapes. Harvest is typically carried out by hand at optimal ripeness to ensure careful selection of the healthiest, most flavorful berries. In the cellar, the grapes are gently crushed and undergo temperature-controlled fermentation to extract color, aroma, and soft tannins without over-extraction. The wine is then matured—often partly in oak—to integrate structure, add notes of spice and sweetness, and polish the texture, resulting in a Primitivo that is both powerful and refined.

Food & Serving
This Primitivo is a natural partner for richly flavored dishes, especially those with a Mediterranean or rustic Italian character. Think slow-braised beef or lamb, grilled sausages, ragù-based pasta, wood-fired pizza with spicy salami, or aged hard cheeses like Pecorino or Parmigiano Reggiano. Serve at 16–18°C to highlight both its fruit and spice components; slightly cooler service will keep the alcohol in check and accentuate freshness. Decanting for 30–45 minutes before serving is recommended, particularly in its first few years, to help the wine open up aromatically and soften the tannins.
