Tasting Notes
In the glass, JO 2023 shows a deep, almost opaque ruby color with violet hues at the rim, signaling both concentration and youth. The nose is generous and layered: ripe black cherry, plum and blackberry are framed by notes of sweet spices, licorice, Mediterranean herbs and a subtle balsamic lift. Hints of cocoa, tobacco leaf and a touch of vanilla reveal careful élevage in quality oak.
On the palate, the wine is full-bodied and richly textured, with velvety tannins and a core of dense, dark fruit. Flavors of blackcurrant, macerated cherries and blackberries are intertwined with savory notes of dried thyme, black olive, cocoa and a gentle smokiness. The natural southern warmth is balanced by a well-judged freshness and a long, sapid finish that lingers with spice and dark chocolate. While already highly enjoyable in its youth, JO 2023 has the structure and concentration to develop beautifully over the next 8–10 years, gaining complexity and softer contours with a few years of bottle age.
Production
The grapes for JO 2023 come from selected Negroamaro vineyards in Salento, where old vines sink their roots into a mix of limestone-rich, clay and sandy soils, all strongly influenced by the nearby Adriatic and Ionian seas. The warm, dry climate and constant coastal breezes help achieve optimum ripeness while preserving aromatic intensity and freshness. Harvest is typically carried out by hand to ensure meticulous selection of bunches, often from low-yielding bush-trained vines that naturally limit production and enhance concentration. In the cellar, the must undergoes temperature-controlled fermentation with extended maceration on the skins to extract color, aroma and tannin, followed by maturation—partly in oak barrels—to refine the wine’s texture and add complexity without overwhelming the natural character of Negroamaro.
Food & Serving
JO 2023 is a natural partner for richly flavored Mediterranean and rustic dishes. Think slow-braised lamb shanks, grilled ribeye, ossobuco, game stews or hearty pasta with ragù. It also pairs beautifully with aged hard cheeses, spicy sausage, and dishes with tomato, olives, and herbs such as rosemary or thyme. Serve at 16–18°C to highlight both fruit and spice; if opened in its youth, a short decant of 30–60 minutes will help the wine open up, soften the tannins and reveal its full aromatic complexity.
