Description
A mature Brunello di Montalcino from Gaja’s historic Pieve Santa Restituta estate, made entirely from Sangiovese. The generous 2007 vintage has developed into a complex, approachable wine, while retaining the freshness and structure that define Brunello.
Tasting Notes
Now showing an evolved, layered character, it offers aromas and flavours of cherry and plum alongside dried flowers, spice, leather, tobacco and woodland notes. The fruit is mature, the tannins are rounded, and Sangiovese’s natural acidity brings freshness and balance.
With almost two decades of bottle age, this is ready to enjoy now. Its mature, complex profile makes careful handling worthwhile; any further cellaring will depend on the condition of the individual bottle.
Production
Made from 100% Sangiovese sourced from several vineyards on the Pieve Santa Restituta estate in Montalcino. The parcels are vinified separately, then the wine is aged for two years in oak. After blending, it receives further maturation in cement tanks and in bottle. Specific details on the estate’s terroir and harvesting methods are not available.
Food & Serving
Serve at around 17–18°C with beef, lamb, game, osso buco, mushroom dishes or aged cheeses. Stand the bottle upright the day before serving, then decant carefully just before pouring to separate any sediment while preserving the wine’s mature aromas.
