Tasting Notes
In the glass, it shows the kind of bright, confident color you expect from a serious Barolo, with a restrained, polished look. The nose unfolds with layered aromas of violet and rose, ripe cherry, raspberry compote, licorice, and subtle hints of camphor and spice-laced oak. On the palate, it is precise and firmly built, yet beautifully balanced, with vibrant acidity and elegant tannins shaping the wine’s long, linear profile. Flavors of red cherry, red citrus, mint, tobacco, and mineral nuances carry through the finish, giving the wine both lift and persistence. This is a Barolo with the structure to age gracefully for many years, developing additional complexity with time in bottle.

Production
Dagromis 2019 is sourced from Gaja-owned parcels in La Morra, especially Cerquio and Silio, as well as Serralunga d’Alba, where calcareous clay soils contribute both power and a cool, precise backbone. The grapes are spontaneously fermented in stainless steel over approximately three weeks, then matured for 12 months in barriques, including around 30% new oak from Allier and other European sources, before spending a further 12 months in large traditional botti to integrate tannin, acidity, and texture.

Food & Serving
This Barolo is a natural partner for rich Piedmontese dishes such as braised beef, risotto with truffle, wild mushroom pasta, game, and aged cheeses. Serve at around 16–18°C to show its aromatic detail and structure at their best, and consider decanting for 1–2 hours if opening young to allow the wine to fully open.
