Production
Sourced from Chardonnay vines rooted in the morainic soils of Franciacorta in Lombardy, this wine reflects a terroir rich in minerals, with well-drained slopes that promote concentration and freshness. Grapes are typically hand-harvested to preserve integrity, then gently pressed to obtain the purest juice. Primary fermentation takes place in temperature-controlled conditions to retain aromatic precision, after which the base wine undergoes secondary fermentation in bottle following the traditional method. The wine then rests on its lees for around 25 months, lending finesse, structure and subtle autolytic notes before disgorgement and a carefully judged Brut dosage.

Brut 25 is highly versatile at the table, pairing effortlessly with oysters, crudo, sushi, and delicate shellfish, as well as lightly fried seafood, vegetable tempura and fresh goat cheeses. It also shines alongside simple pasta dishes with seafood, risotto with herbs, or a platter of charcuterie and soft-rind cheeses. Serve well-chilled at around 6–8°C (43–46°F). In magnum, a brief 10–15 minutes in the glass or an open bottle is usually enough to let the wine express its full aromatic range; decanting is not necessary, but pouring into generous white-wine or sparkling flutes will enhance both aroma and texture.
