Production
The Chardonnay for this Alta Langa Blanc de Blancs is sourced from high-altitude vineyards in Piemonte, where cooler temperatures, steep slopes and marl- and limestone-rich soils yield grapes with naturally high acidity and fine aromatic definition—ideal for premium sparkling wine. Grapes are typically hand-harvested to ensure only the healthiest, ripest clusters reach the cellar, often picked in the early morning to preserve freshness. After a gentle pressing, the must is fermented at controlled temperatures in stainless steel to retain purity of fruit. The wine then undergoes its ‘metodo classico’ second fermentation in the bottle, resting sur lie for an extended period to develop complexity, fine bubbles and creamy texture. Dosage is kept low to achieve the Extra Brut style, showcasing the terroir-driven character of Alta Langa rather than sweetness.
