Tasting Notes
Pale, glowing pink in the glass with a persistent stream of delicate bubbles, this rosé is immediately inviting. The nose opens with peach, wild strawberries, mirabelle plum, anise, and white flowers, creating a fragrant and expressive bouquet. On the palate, it is juicy and graceful, with a mineral edge and lively acidity framing notes of wild berries, Mediterranean herbs, citrus, and pale apricots. A subtle touch of toast and honey comes through from lees aging, adding complexity without weighing down the wine. With its slender body, fresh structure, and just 5.4 g/l of residual sugar, it should drink beautifully now and can develop slightly more nuance over the next couple of years.

Production
Made from Cinsault, Grenache, and a small amount of Aubin, this sparkling rosé is produced from the Provence coast, where warm sun and maritime influence help preserve freshness and aromatic lift. The grapes are directly pressed, then vinified in stainless steel to keep the fruit clean and precise. After bottling, the wine undergoes a second fermentation in bottle and is aged sur lie for nine months, which brings its subtle brioche and toast notes.

Food & Serving
An excellent aperitif, this wine also pairs naturally with oysters au natural, sashimi, steamed mussels, shrimp, and light summer salads. Serve well chilled at around 6–8°C; decanting is not necessary.
