Etienne Calsac’s Clos des Maladries is a rare single-vineyard Grand Cru Champagne from Avize, made entirely from Chardonnay and finished Extra Brut. Produced using the traditional method, it brings together the chalky character of the Côte des Blancs with the distinctive identity of a clos—a walled vineyard parcel prized for its individual expression.

Tasting Notes
Fine, persistent bubbles accompany fresh citrus and fruit aromas, with chalky, mineral notes at the forefront. The palate is taut and refreshing, balancing bright fruit, pronounced minerality and a long, composed finish. Its freshness and structure suggest potential to develop in bottle, though no specific cellaring period is provided.

Production
The Chardonnay comes from the south-facing Clos des Maladries in Avize, where deep chalk soils help shape the wine’s mineral character and natural freshness. The vineyard is worked with horses, reflecting a hands-on approach to the land; specific harvest methods are not stated. Must ferments spontaneously with native yeasts, then matures partly in oak barrels and partly in stainless-steel tanks. The wine is bottled for its second fermentation according to the traditional method and is neither filtered nor fined; Extra Brut dosage preserves its crisp, focused profile.

Food & Serving
Serve well chilled, around 8–10°C, with oysters, shellfish, sashimi or delicate fish dishes; it also pairs well with aged hard cheeses. Decanting is not usually necessary for Champagne, but a brief rest in a glass can help the wine open if it seems especially reserved.
