Tasting Notes
In the glass, PSI 2023 shows a deep ruby color with impressive clarity and depth. The nose is lifted and expressive, opening with dark berries, cherry, violet, liquorice, and a subtle layer of spice. On the palate, it is concentrated yet finely balanced, with fresh acidity, polished tannins, and a long, mineral-driven finish. The wine’s cool 2023 growing season lends extra precision and freshness, while its structure suggests good aging potential over the next several years. It can also be enjoyed young with a little aeration.

Production
PSI 2023 comes from high-altitude vineyards in Ribera del Duero, where old vines are farmed sustainably and benefit from the region’s demanding continental climate. The cool, dry conditions of the 2023 vintage helped preserve acidity and aromatic detail. Fermentation took place in large cement tanks, followed by 14 to 18 months of aging in used oak barrels and large foudres to maintain fruit purity and the wine’s natural structure.

Food & Serving
This is an excellent partner for roast lamb, grilled steak, Iberian pork, slow-braised dishes, and mature cheeses. Serve at 16–18°C, and consider decanting for 30–60 minutes if drinking now to allow the wine to खुलen up and show its full aromatic range.
