Tasting Notes
In the glass, PSI 2022 shows a deep, dark color that hints at its richness. The nose is expressive and layered, with ripe blackcurrant, violets, and a graphite note adding a cool mineral edge to the fruit. On the palate, it is generous and full-bodied, showing juicy red plums, blackberries, and cherries alongside floral tones and fine, ripe tannins. Despite its depth, the wine keeps a lively freshness and firm acidity, giving it excellent balance and a long, polished finish. It should age gracefully over the next several years, gaining complexity and softness with time.

Production
PSI 2022 is made from old-vine Tempranillo with a small proportion of Garnacha, sourced from Castilla y León. The grapes are fermented in concrete and stainless steel, with most of the wine kept in neutral tanks to preserve purity and freshness, while a smaller portion is matured in French oak, including a modest amount of new oak, to add subtle texture and depth. The wine is then aged for around 18 months in used barrels, helping to build complexity without overpowering the fruit.

Food & Serving
This is a versatile, food-friendly red that pairs beautifully with roast lamb, grilled beef, game birds, and rich mushroom dishes. It also works well with aged Manchego, Iberian ham, or slow-cooked Mediterranean dishes. Serve at around 16-18°C and consider decanting for 30-60 minutes if you’d like to open up the aromatics and soften the tannins.
