Dominio de Pingus Pingus 2021 is one of Spain’s most sought-after Tempranillo wines, crafted from tiny, old-vine parcels in Castilla y León. With fruit drawn from the historic Barrosso and San Cristóbal vineyards, it represents a rare combination of concentration, finesse, and unmistakable pedigree.
Tasting Notes
In the glass, Pingus 2021 typically shows deep, saturated color with remarkable intensity. The nose is layered and precise, offering dark berries, crushed flowers, spice, subtle earthy depth, and refined oak nuances rather than overt woodiness.
On the palate it is powerful yet beautifully controlled, with impressive depth of fruit, polished tannins, and a long, finely textured finish. The old-vine Tempranillo gives exceptional concentration and balance, and the wine should age gracefully for many years, gaining complexity and nuance over time.
Production
The grapes come from just 4.2 hectares split between the Barrosso and San Cristóbal parcels, where vines are over 65 years old and in some cases significantly older. After a rainy winter provided enough soil moisture for the vines to handle the dry summer, the 2021 vintage delivered both excellent ripeness and strong yields for the estate. Nearly half the grapes were vinified as whole clusters, fermented in 2,000-liter French oak barrels, with maturation taking place largely in used French oak, including 228-liter barrels previously used for Flor de Pingus. The wine spent around 21 months in barrel and was bottled without fining or filtration.
Food & Serving
Serve Pingus 2021 with exceptional dishes such as roast lamb, grilled ribeye, slow-braised short ribs, game, or aged Manchego. Ideal serving temperature is 16–18°C, and decanting for 1–2 hours is recommended to let the wine fully open and show its detail and structure.

Dominio de Pingus was founded by Danish winemaker Peter Sisseck and has become one of the benchmark names in modern Spanish fine wine. Based in Castilla y León, the estate is celebrated for its meticulous vineyard work, tiny production, and cult status among collectors. Its flagship wine, Pingus, helped redefine the global perception of Spanish Tempranillo and remains one of the region’s most iconic achievements.
