Dominio de Pingus is one of Spain’s most sought-after modern icons, made from exceptionally old Tempranillo vines in Castilla y León. Sourced from just two tiny parcels, Barrosso and San Cristóbal, this is a wine of remarkable concentration, precision, and rarity, crafted in very limited quantities by Peter Sisseck.

Tasting Notes
Pingus is typically deeply colored and intensely expressive, with a dark, polished appearance that hints at its concentration. The nose tends to unfold with layers of black fruits, violets, spice, and subtle earthy complexity, often joined by fine oak nuances and a sense of freshness that keeps everything lifted. On the palate, it is powerful yet refined, combining ripe, silky fruit with firm structure, layered texture, and remarkable balance. The use of whole clusters and restrained oak can add spice, aromatic complexity, and tension. This is a wine built for aging and should develop beautifully over many years, gaining nuance, savory depth, and elegance with time.

Production
The grapes come from two historic plots, Barrosso and San Cristóbal, totaling only 4.2 hectares, planted with old Tempranillo vines some more than 65 years old and others even older. The vineyards are worked carefully to preserve quality from these low-yielding parcels, and in favorable years they produce fruit for only around 30 barrels. Vinification includes a significant proportion of whole-cluster fermentation when the stems reach full ripeness, adding aromatic complexity and structure. The wine is aged for around 21 months in French oak, with a mix of large 2,000-liter barrels and used 228-liter barrels, and is bottled without fining or filtration to preserve purity and texture.

Food & Serving
This is a wine for rich, deeply flavored dishes such as roast lamb, beef tenderloin, game, braised short ribs, or mushroom-based dishes with truffle. Serve at 16–18°C and, given its intensity and structure, consider decanting for at least 1–2 hours before serving, especially when young.

Based in Ribera del Duero, the estate has become a benchmark for Spanish fine wine and one of the region’s most admired names, celebrated worldwide for its purity, depth, and precision.
