Tasting Notes
In the glass, Verjago 2022 typically shows a deep ruby red hue with youthful purple highlights, signaling both freshness and intensity. The nose is generous and layered, offering notes of ripe red cherries and blackberries, supported by hints of dried herbs, sweet spices, subtle cocoa and a touch of violet. On the palate, the wine is medium to full-bodied with a silky, rounded texture and well-integrated tannins. Ripe red and dark fruit flavors are framed by gentle spice, a savoury undercurrent and a lively, refreshing acidity that keeps the wine poised and food-friendly. Production
Verjago is sourced from hillside vineyards in the heart of the Valpolicella Classica zone, an area known for well-drained, predominantly calcareous and clay-limestone soils that naturally limit yields and enhance flavor concentration. The grapes are carefully hand-harvested to ensure only the healthiest, ripest bunches are selected. After harvest, a portion of the fruit is traditionally allowed a brief period of natural drying, concentrating sugars and aromas before gentle pressing. Fermentation takes place under temperature control to preserve aromatic freshness, followed by maturation in a combination of large oak casks and/or smaller barrels, where the wine gains texture, complexity and subtle spice without losing its hallmark freshness and drinkability.

Food & Serving
Domini Veneti Verjago 2022 is an excellent partner for rich pasta dishes with meat ragù, roast or grilled red meats, game birds, and aged hard cheeses such as Parmigiano Reggiano or Grana Padano. It also works beautifully with mushroom-based dishes, hearty risottos and charcuterie boards. Serve at 16–18°C (60–64°F) to highlight its aromatics and balance. A short decant of 30–45 minutes is recommended, especially in its youth, to allow the wine to open up and reveal its full range of fruit, spice and floral notes.
