Tasting Notes
In the glass, Savagnin In-Fusion Bio 2020 shows a deep golden to light amber hue, a clear sign of its skin-contact vinification. The nose opens with savory, herbal notes—think dried mountain herbs and chamomile—interwoven with subtle citrus tones of lemon zest and candied peel, plus a faint hint of dried flowers and spice. On the palate, the wine is assertive and textural, with clearly defined, fine-grained tannins that are more familiar from red wine than from classic whites. A brisk, linear acidity runs through the core, giving lift and energy to the richer texture and gentle creaminess gained from aging in large old barrels. The Savagnin In-Fusion Bio 2020 hails from the cool, limestone- and marl-rich slopes of the Jura, a terroir that gives naturally high acidity and a distinct mineral backbone. Domaine Villet farms organically, favoring low yields and careful hand work in the vineyard to ensure healthy, concentrated fruit—grapes are typically harvested by hand to allow precise selection. In the cellar, the wine is made as an orange wine, with extended skin contact to extract color, tannins and aromatic complexity from the Savagnin berries. Fermentation proceeds with indigenous yeasts, and the wine is then aged in large, used wooden casks, which impart a subtle roundness and creaminess without overt oak flavor, preserving the wine’s freshness and its varietal character. Minimal intervention and modest sulfuring are used to keep the expression as pure and authentic as possible.
