This white Burgundy balances purity of fruit with a subtle mineral backbone, capturing the energy and freshness of its cool-climate origins. For those who enjoy Chardonnay with precision rather than excess oak, this cuvée delivers clarity, focus and a real sense of place.

Tasting Notes
In the glass, La Montagne 2023 shows a pale lemon to light straw hue with youthful, silvery reflections. The nose is lifted and precise, offering notes of citrus (lemon zest, pomelo), crisp green apple and white flowers, underpinned by a subtle chalky minerality and a gentle hint of almond or fresh hazelnut. On the palate, this Chardonnay is lively and taut, with a vibrant line of acidity that gives the wine both tension and length. Expect flavors of orchard fruits, lemon curd and a touch of pear, layered with a saline, stony character that speaks to its Hautes Côtes origins. The oak, if used, is discreet and supportive rather than dominant, allowing the fruit and terroir to shine. Enjoyable in its youth for its brightness and purity, it should develop nicely over the next 3–6 years, gaining a little more creaminess and complexity while retaining its freshness.

Production
La Montagne comes from the Hautes Côtes de Nuits, where higher altitude vineyards and cooler nights help preserve acidity and aromatic finesse in Chardonnay. Soils in this area typically combine limestone and clay, lending both tension and subtle depth to the wines. Grapes are generally harvested by hand to ensure careful selection of healthy, ripe bunches. After gentle pressing, the must is fermented—often in a mix of stainless steel and oak—at controlled temperatures to preserve fruit and aromatics. The wine is then aged on its lees for additional texture and complexity, with any oak influence kept in balance to emphasize freshness and minerality over heaviness.

Food & Serving
This Hautes Côtes de Nuits Blanc is an excellent partner for delicate seafood dishes such as oysters, scallops, poached white fish or sashimi, as well as classic Burgundian pairings like roast chicken, rabbit in mustard sauce or a simple poultry terrine. It also works beautifully with creamy goat’s cheese, young Comté, or vegetable dishes featuring asparagus, fennel or leek. Serve at 10–12°C to highlight its aromatics and tension; a brief 15–20 minutes in the fridge before opening is ideal. Decanting is not essential, but pouring the wine into a larger glass and giving it a few minutes in the glass will help it open and reveal its floral and mineral nuances.
