Domaine Moreau-Naudet Chablis Pargues V.V. 2022 is a pure, old-vine expression of Chablis that captures the tension, minerality and quiet power that Chardonnay can achieve in this northern corner of Burgundy. Sourced from the renowned lieu-dit Les Pargues, this cuvée sits stylistically between classic village Chablis and Premier Cru in both depth and complexity. Crafted by a producer often described as a true “vinforkæmper” – a champion for authentic, terroir-driven wine – it offers remarkable character for the level.

Tasting Notes
In the glass, the 2022 Pargues V.V. shows a pale straw color with green reflections, signaling freshness and youth. The nose opens with bright citrus—lemon zest and grapefruit—layered over green apple, white flowers, and a distinct chalky, seashell minerality that is very true to Chablis, with a hint of flint and subtle nougat as it warms in the glass. On the palate, this wine is tense yet generous, with a precise line of acidity framing flavors of lemon curd, crisp pear, green apple and a touch of saline. Old vines bring a lovely mid-palate weight and texture, giving the wine a slightly creamy, layered feel without sacrificing its vibrancy. The finish is long, mouthwatering and mineral, with lingering notes of citrus peel and wet stone. Enjoyable now for its energy and purity, it will develop additional complexity—hints of hazelnut, honey and more pronounced minerality—over the next 5–7 years.

Production
Les Pargues is a celebrated site in Chablis, lying on classic Kimmeridgian limestone and marl, with abundant fossilized seashells that lend the wine its signature saline, stony character. The “V.V.” (Vieilles Vignes) comes from older Chardonnay vines that produce naturally lower yields and more concentrated fruit. Grapes are typically harvested by hand to ensure careful selection in the vineyard, then gently pressed. Fermentation takes place with indigenous yeasts, primarily in stainless steel with a portion often raised in older oak to add subtle texture rather than overt wood flavor. Aging on fine lees enhances the wine’s mouthfeel and complexity while preserving its precision and purity of terroir.

Food & Serving
This Chablis is a natural match for shellfish—think oysters, mussels, scallops and prawns—as well as simply prepared white fish, sushi and sashimi. It also pairs beautifully with goat cheese, fresh cheeses, light poultry dishes, and vegetable-focused plates such as asparagus, fennel or dishes with a lemon-butter sauce. Serve well-chilled but not icy, around 10–12 °C (50–54 °F), to allow the aromas to fully express themselves. Decanting is not essential, but pouring the wine into a carafe or giving it 15–20 minutes in the glass will help open up the more nuanced mineral and floral notes.
