Domaine Michel Bouzereau’s Volnay 1er Cru Les Aussy 2018 is a refined expression of red Burgundy, combining the delicacy and floral elegance associated with Volnay with impressive depth and mineral precision. Tasting Notes
The wine has a clear ruby colour with a graceful depth. Its aromatic profile is delicate yet inviting, revealing dark cherries and blackberries layered with dried flowers, subtle spice and a restrained touch of oak. On the palate, it is pure, polished and finely structured, with silky tannins, dark fruit and a distinct mineral freshness. The finish is long, bright and harmonious, balancing Volnay’s characteristic finesse with a firm underlying core. The 2018 vintage is approachable now with gentle aeration, but its balance and structure give it excellent potential for further bottle ageing. With time, the fruit and mineral nuances should become even more integrated and complex.

Production
Les Aussy covers just 0.18 hectares and is planted with old Pinot Noir vines. Its red limestone soils contribute both aromatic precision and a firm mineral character. The grapes are harvested by hand and carefully selected before undergoing a gentle vinification designed to preserve the purity of the fruit and allow the vineyard’s character to remain at the forefront.

Food & Serving
Serve at approximately 15–17°C, allowing the wine to show its perfume without becoming overly warm. A short decant of 30–60 minutes is recommended when enjoying the wine now, particularly in its youth. Its elegant structure pairs beautifully with roast chicken, duck, veal, pork tenderloin, mushroom dishes and refined preparations featuring game or earthy vegetables.
