Tasting Notes
In the glass, the 2022 En Cailleret shows a luminous pale gold hue with green reflections, hinting at both freshness and concentration. The nose is lively and inviting, with aromas of ripe white peach, juicy pear and crisp apple layered over notes of white flowers, toasted hazelnuts and a subtle hint of brioche and citrus zest.
On the palate, it is medium to full-bodied, silky and seamless, with a sweet core of ripe stone fruit that is beautifully framed by vibrant acidity. The texture is refined and satin-like, giving a sense of effortlessness despite the wine’s depth. A pronounced stony, chalky minerality drives through to the finish, adding precision and length. While already expressive in its youth, this 2022 has the structure and balance to evolve gracefully over the next 8–12 years, gaining complexity and nuttier, honeyed nuances with time in bottle.
Production
Sourced from the Premier Cru En Cailleret, one of Chassagne-Montrachet’s most esteemed parcels, this wine draws its character from thin, stony soils rich in limestone and gravel that naturally limit yields and concentrate flavour. The slope’s ideal exposure ensures excellent ripening while preserving freshness, a crucial balance in a solar year like 2022. Grapes—100% Chardonnay—are typically picked by hand at optimal maturity to protect the delicate skins and ensure rigorous selection in both vineyard and cellar. Fermentation takes place in oak barrels, often with indigenous yeasts, followed by élevage in a carefully judged proportion of new and used French oak, allowing the wine to gain texture and complexity without overpowering its mineral core. Lees contact adds creaminess and depth, while a measured use of bâtonnage preserves tension and finesse.
Food & Serving
This Chassagne-Montrachet 1er Cru is an excellent partner for refined dishes such as butter-poached lobster, pan-seared scallops, turbot or sole with a beurre blanc, or roasted chicken with morel cream sauce. It also pairs beautifully with veal in white wine sauce, rich fish terrines, or aged, nutty cheeses like Comté and Beaufort. Serve cool but not too cold, ideally at 11–13°C, to allow the layers of fruit and minerality to fully express themselves. A light decant of 20–30 minutes in its youth can help the wine open up aromatically, especially if served within the first few years after release.
