Description

Domaine Jonathan Didier Pabiot’s 2019 Aubaine is a biodynamic-minded expression of Sauvignon Blanc from a distinctive Pouilly-Fumé site. Named “Aubaine”—a stroke of good fortune—it comes from old vines rooted in Portland limestone, with restrained yields and extended lees ageing lending the wine added depth.

Tasting Notes
The wine shows ripe yellow-fruit character, joined by delicate green notes, including fully ripe gooseberry. Its style is classically Sauvignon Blanc but restrained rather than overtly aromatic. The producer recommends giving it plenty of air before tasting so its full character can emerge. Its development in bottle is not specified.

Production
The grapes come from selected parcels in the lieu-dit Les Champs de Cris, where weathered Portland limestone—known locally as caillottes—defines the soils. The vines are up to 50 years old, and yields are limited to 35 hl/ha. The wine spent 18 months on its lees in concrete tanks; harvesting and vinification details beyond this are not provided.
