Tasting Notes
In the glass, the wine shows a deep golden colour with amber reflections, already hinting at its oxidative complexity. The nose is layered and captivating, with aromas of toasted walnuts, hazelnuts, dried citrus peel, curry spice, brioche, tobacco, honey, and a saline mineral edge that adds remarkable lift and precision. On the palate, it is bone-dry, concentrated, and beautifully structured, with vibrant acidity balancing a rich, creamy texture. The finish is long, savoury, and umami-driven, revealing exceptional depth and terroir expression. Built for the long haul, this 2018 Vin Jaune has outstanding ageing potential and will continue to evolve gracefully for decades.

Production
The grapes come from limestone- and marl-rich slopes around Château-Chalon, where the cool Jura climate and slow ripening help preserve freshness and build flavour intensity. Vin Jaune is made exclusively from Savagnin and matured for a minimum of six years and three months in old oak barrels without topping up, allowing a natural layer of flor to form and shape the wine’s distinctive oxidative profile.

Food & Serving
This is a superb wine for richly flavoured dishes such as Comté, aged hard cheeses, poultry in cream sauce, mushrooms, veal, and classic Jura pairings like chicken with morels or dishes with nuts and dried fruit. Serve slightly cool, around 14–16°C, and consider decanting briefly if desired, though a careful opening and time in the glass is often enough for the wine to unfold.
