Sourced from the domaine’s parcel on the transition between Chambolle-Musigny and Morey-Saint-Denis, it captures both the elegance of Chambolle and the darker, more powerful side of Bonnes-Mares.

Tasting Notes
In the glass, the 2016 vintage shows impressive density and focus, with a deep ruby-garnet color. The nose opens with dark cherry, blackcurrant, and violet, layered with subtle notes of spice and forest floor that become more expressive with air. The palate is concentrated and structured, with finely grained tannins and a cool mineral backbone that keeps the wine lifted and precise. The finish is long, firm, and energetic, suggesting a wine that is still youthful today but built for extended cellaring over many years.

Production
Roumier’s parcel in Bonnes-Mares lies on a classic seam of terroir where light limestone meets darker clay, giving the wine both tension and power. In 2016, frost reduced yields significantly, but the fruit that remained was highly concentrated. Harvested by hand, the grapes underwent partial destemming and fermentation without additives, followed by 16–18 months of élevage in oak barrels, with a moderate proportion of new wood to preserve purity and detail.

This is a wine that shines with refined, flavorful dishes such as roast duck, pigeon, venison, wild mushroom risotto, or aged hard cheeses. Serve at around 16–18°C, and consider decanting for 1–2 hours if opening young, as it will help soften the structure and reveal more of its aromatic complexity.
