Domaine G. Roumier’s Bonnes-Mares 1997 is a beautifully mature Grand Cru from one of Burgundy’s most admired domaines. Sourced from historic parcels between Chambolle-Musigny and Morey-Saint-Denis, it captures the rare balance of depth, finesse, and elegance that has made Roumier a benchmark producer in the Côte de Nuits.

Tasting Notes
Now fully evolved, the wine shows a luminous garnet hue with gentle signs of age. The nose unfolds with kirsch, cherry compote, dried flowers, forest floor, and a subtle sauvage, animal note that adds complexity and charm. On the palate, it is round and harmonious, with ripe red fruit, supple tannins, and a modest but still lively acidity carrying the wine with grace. The finish is silky and refined, layered with tertiary notes and a lingering sense of balance. It is at its best now, though well-stored bottles can continue to hold for a short period longer.

Production
Bonnes-Mares is one of Burgundy’s most distinguished Grand Cru vineyards, lying on a terroir of limestone and clay that brings both tension and depth to Pinot Noir. In 1997, a warm and early vintage produced naturally ripe fruit, harvested by hand with careful selection, partial destemming, and traditional ageing in oak barrels for around 16–18 months.

Food & Serving
This mature Bonnes-Mares pairs beautifully with roast duck, pigeon, veal tenderloin, game birds, or mushroom-based dishes that echo its earthy complexity. Serve at around 16–18°C, and decant gently for 30–60 minutes if the bottle is showing well, though older vintages should be handled with care and tasted before extended aeration.
