Grapes are typically harvested by hand to ensure careful selection on the slope, preserving healthy, optimally ripe bunches. In the cellar, François Villard employs gentle pressing and a controlled, relatively slow fermentation, often in a mix of stainless steel and oak, to build texture without overwhelming the natural fruit and minerality. A period of maturation on fine lees, with occasional bâtonnage, contributes to the wine’s creamy mouthfeel and complexity while retaining the freshness that defines top-tier northern Rhône whites.
